How To Make Jicama and Black Bean Tacos
A tasty and healthy vegetarian option for taco night. Crunchy jicama and protein-packed black beans make for a delicious filling.

Ingredients
- 1 large jicama, peeled and diced
- 1 can of black beans, drained and rinsed
- 1 red onion, diced
- 1 red bell pepper, diced
- 1 tsp of cumin
- Salt and pepper, to taste
- 8 corn tortillas
- 1 avocado, sliced
- Fresh cilantro, chopped
- Lime wedges, for serving
Instructions

In a large pan, sauté the jicama, black beans, red onion, and red bell pepper over medium heat.

Add cumin, salt, and pepper to taste. Cook until the jicama is tender and the beans are heated through, about 10 minutes.

Heat the tortillas in a separate pan until softened.

Assemble the tacos by filling each tortilla with the jicama and black bean mixture.

Top with avocado slices, chopped cilantro, and a squeeze of fresh lime juice.
