Ingredients

  • 1 small jicama, peeled and julienned
  • 1 red bell pepper, seeded and julienned
  • 1 small red onion, peeled and sliced
  • 1/3 cup chopped cilantro
  • 1/4 cup freshly squeezed lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine jicama, red bell pepper, red onion, and cilantro.

  2. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.

  3. Pour the dressing over the jicama mixture and toss until well combined.
