  • 1 small jicama, peeled and julienned

  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine jicama, watermelon, red onion, and cilantro.

  2. In a small bowl, whisk together lime juice, honey, olive oil, salt, and pepper.

  3. Drizzle the dressing over the salad and toss to combine.

  4. Serve chilled.
