  • 1 small jicama, peeled and julienned
  • 1/4 small red cabbage, thinly sliced
  • 1 large carrot, peeled and julienned
  • 2 tbsp fresh lime juice
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large bowl, combine the jicama, red cabbage, and carrots.

  2. In a separate small bowl, whisk together the lime juice, apple cider vinegar, honey, olive oil, salt, and black pepper.

  3. Pour the dressing over the jicama mixture and toss to coat evenly.

  4. Let the slaw sit for at least 10 minutes before serving to allow the flavors to meld together.
