- 1 large jicama, peeled and julienned
- 2 oranges, peeled and cut into segments
- 1 grapefruit, peeled and cut into segments
- 1 lime, juiced
- 1 tbsp honey
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
- Fresh cilantro, chopped
- Optional: sliced avocado, toasted pumpkin seeds
Instructions

In a large bowl, combine jicama, orange segments, and grapefruit segments.

In a small bowl, whisk together lime juice, honey, olive oil, salt, and pepper to make the dressing.
