Ingredients

  • 1 lb carrots, peeled and sliced into coins
  • 2 tbsp honey
  • 1 tbsp butter
  • 1 tsp grated ginger
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large skillet, melt the butter over medium heat.

  2. Add the sliced carrots to the skillet and cook for about 5 minutes, until they start to soften.

  3. In a small bowl, mix together the honey and grated ginger.

  4. Pour the honey ginger mixture over the carrots in the skillet and stir to coat.

  5. Reduce the heat to low and cover the skillet. Let the carrots cook for about 10 minutes, until they are tender.

  6. Season with salt and pepper to taste.

  7. Remove from heat and garnish with fresh parsley, if desired.
