How To Make Ginger Veggie Stir-Fry

Ingredients
- 1 tablespoon vegetable oil
- 1 red onion, sliced
- 2 bell peppers, sliced
- 2 carrots, julienned
- 1 broccoli head, cut into florets
- 1 zucchini, sliced
- 3 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 tablespoon cornstarch
- 1/4 cup water
- Sesame seeds, for garnish
- Cooked rice or noodles, for serving
Instructions

Heat the vegetable oil in a large skillet over medium-high heat.

Add the sliced red onion and cook for 2 minutes until slightly softened.

Add the bell peppers, carrots, broccoli, zucchini, garlic, and ginger to the skillet. Cook for 5-6 minutes, stirring occasionally, until the vegetables are tender-crisp.

In a small bowl, whisk together the soy sauce, rice vinegar, honey, cornstarch, and water. Pour the sauce over the vegetables and stir to coat evenly. Cook for an additional 2-3 minutes until the sauce has thickened.

Remove from heat and garnish with sesame seeds. Serve the ginger veggie stir-fry over cooked rice or noodles.
