  • 1 tablespoon vegetable oil
  • 1 red onion, sliced
  • 2 bell peppers, sliced
  • 2 carrots, julienned
  • 1 broccoli head, cut into florets
  • 1 zucchini, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Sesame seeds, for garnish
  • Cooked rice or noodles, for serving

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.

  2. Add the sliced red onion and cook for 2 minutes until slightly softened.

  3. Add the bell peppers, carrots, broccoli, zucchini, garlic, and ginger to the skillet. Cook for 5-6 minutes, stirring occasionally, until the vegetables are tender-crisp.

  4. In a small bowl, whisk together the soy sauce, rice vinegar, honey, cornstarch, and water. Pour the sauce over the vegetables and stir to coat evenly. Cook for an additional 2-3 minutes until the sauce has thickened.

  5. Remove from heat and garnish with sesame seeds. Serve the ginger veggie stir-fry over cooked rice or noodles.
