Serves:

Ingredients

  • 2 cups sushi rice
  • 4 cups water
  • 1/4 cup rice vinegar
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp grated ginger
  • 1 tbsp honey
  • 1/4 cup sesame seeds, toasted
  • 1 cucumber, sliced
  • 2 carrots, shredded
  • 1 avocado, sliced
  • 1/2 cup edamame beans
  • 4 sheets nori, crumbled
  • 1/4 cup pickled ginger
  • 1/4 cup soy sauce, for serving

Instructions

  1. Cook sushi rice according to package instructions and let it cool slightly.

  2. In a small bowl, mix together rice vinegar, sesame oil, soy sauce, grated ginger, and honey.

  3. Pour the mixture over the cooked sushi rice and mix well.

  4. Divide the sushi rice into four bowls.

  5. Top each bowl with sesame seeds, cucumber, carrots, avocado, edamame beans, crumbled nori, and pickled ginger.

  6. Serve the bowls with additional soy sauce on the side.
