How To Make Spiced Chicken Skewers

Ingredients
- 1 lb chicken breast, cut into cubes
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 cup Greek yogurt
- 1 tbsp lemon zest
- 1 tbsp fresh lemon juice
- 1/2 tsp ground cumin
- 4 flatbreads, grilled
Instructions

In a bowl, combine the olive oil, lemon juice, paprika, ground cumin, ground coriander, garlic powder, onion powder, salt, and black pepper. Mix well to make a marinade.

Add the chicken cubes to the marinade and toss to coat. Allow the chicken to marinate for at least 10 minutes, or up to overnight in the fridge.

Preheat a grill or grill pan over medium heat. Thread the marinated chicken onto skewers.

Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and nicely charred.

Meanwhile, prepare the chopped salad by combining the diced cucumber, red bell pepper, red onion, fresh parsley, and fresh mint in a bowl. Toss well to combine.

In a separate bowl, mix together the Greek yogurt, lemon zest, lemon juice, and ground cumin to make the seasoned yogurt.

Serve the grilled chicken skewers with the chopped salad, seasoned yogurt, and grilled flatbreads.
