Ingredients

  • 4 medium leeks, trimmed and halved lengthwise
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 oz goat’s cheese, crumbled
  • Fresh thyme leaves, for garnish

Instructions

  1. Preheat a griddle pan over medium heat.

  2. Brush the leeks with olive oil and season with salt and pepper.

  3. Place the leeks on the griddle pan and cook for 10-12 minutes, turning occasionally, until tender and lightly charred.

  4. Remove the leeks from the griddle pan and arrange on a serving plate.

  5. Sprinkle the crumbled goat’s cheese over the leeks.

  6. Drizzle with a little more olive oil and garnish with fresh thyme leaves.

  7. Serve immediately.
