Ingredients
- 2 large aubergines (eggplants)
- 4 cloves of garlic, minced
- 4 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Romesco sauce for serving
Instructions

Preheat the oven to 200°C (400°F). Slice the aubergines into thick steaks, about 1-inch thick.

In a small bowl, mix together the minced garlic, olive oil, soy sauce, smoked paprika, cumin, salt, and black pepper.

Brush both sides of the aubergine steaks with the garlic mixture and place them on a baking sheet lined with parchment paper.

Bake in the preheated oven for 25-30 minutes, or until the aubergine steaks are tender and golden brown.
