  • 6 large eggs
  • 1/2 cup chopped Anaheim peppers
  • 1/2 cup sliced mushrooms
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.

  2. In a mixing bowl, whisk together eggs, salt, and black pepper.

  3. In a 10-inch oven-safe skillet, heat olive oil over medium-high heat.

  4. Add Anaheim peppers and mushrooms to skillet and sauté until tender.

  5. Pour egg mixture into skillet and stir to combine with vegetables.
