How To Make Anaheim Pepper Enchiladas Recipe

Spicy, cheesy, and scrumptious enchiladas filled with Anaheim peppers.

Ingredients

  • 4 Anaheim peppers, roasted and diced
  • 1 cup of shredded cheddar cheese
  • 1 cup of shredded mozzarella cheese
  • 10 corn tortillas
  • 1/4 cup of chopped onion
  • 1 tbsp of vegetable oil
  • 1 tsp of ground cumin
  • 1 tsp of chili powder
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, heat vegetable oil over medium heat. Add chopped onions and sauté for 2-3 minutes.

  3. Add diced roasted Anaheim peppers, ground cumin, chili powder, salt, and pepper to the skillet. Stir well and cook for 3-4 minutes.

  4. Remove the skillet from heat and stir in 1/2 cup of shredded cheddar cheese and 1/2 cup of shredded mozzarella cheese.

  5. In a separate microwave-safe plate, stack tortillas and heat for 30 seconds until warm and pliable.

  6. Spoon 1-2 tablespoons of the filling onto the center of each tortilla and roll tightly.

  7. Place the enchiladas seam-side down in a greased baking dish.

  8. Top the enchiladas with the remaining shredded cheese.

  9. Bake for 25-30 minutes until cheese is melted and bubbly.

  10. Let cool for a couple of minutes before serving.
