  • 1 tbsp olive oil
  • 6 oz breakfast sausage, crumbled
  • 1 cup sliced mushrooms
  • 8 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded sharp cheddar cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F.

  2. Heat olive oil in a 10-inch oven-safe skillet over medium-high heat. Add breakfast sausage and mushrooms, and cook until sausage is browned and mushrooms are tender.

  3. In a bowl, whisk together eggs, milk, salt, and pepper.

  4. Pour the egg mixture over the sausage and mushrooms in the skillet. Sprinkle shredded cheese over the top.

  5. Transfer the skillet to the oven and bake for 12-15 minutes or until the eggs are set.

  6. Garnish with fresh parsley and serve hot or warm.
