Ingredients

  • 1 medium cauliflower, cut into florets
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Steam the cauliflower florets until tender, about 10 minutes.

  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.

  4. Gradually whisk in the milk and cook until thickened, about 3-4 minutes.

  5. Remove from heat and stir in the mustard, salt, and pepper.

  6. Place half of the cauliflower in a baking dish and sprinkle with half of the cheese. Repeat with remaining cauliflower and cheese.

  7. Pour the milk mixture over the cauliflower and cheese.

  8. Bake for 15 minutes, or until golden and bubbly.

  9. Serve hot and enjoy!
