Serves:

Ingredients

  • 4 carrots, peeled and chopped
  • 2 parsnips, peeled and chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.

  2. Add the carrots and parsnips to the pot and cook for 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes or until the carrots and parsnips are tender.

  4. Remove the pot from heat and use an immersion blender to puree the soup until smooth.

  5. Stir in the coconut milk and season with salt and pepper to taste.

  6. Return the pot to heat and simmer for 5 minutes to heat through.

  7. Serve hot and enjoy!
