Ingredients

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1/2 lb shrimp, peeled and deveined
  • 2 eggs, beaten
  • 3 tbsp fish sauce
  • 2 tbsp tamarind paste
  • 2 tbsp sugar
  • 1/2 cup bean sprouts
  • 1/4 cup chopped green onions
  • 1/4 cup crushed peanuts
  • 1 lime, cut into wedges

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.

  2. Heat the vegetable oil in a large pan or wok over medium heat. Add the minced garlic and cook until fragrant.

  3. Add the shrimp to the pan and cook until pink and cooked through. Push the shrimp to one side of the pan.

  4. Pour the beaten eggs into the empty side of the pan and scramble until cooked.

  5. Add the cooked rice noodles to the pan and stir to combine with the shrimp and eggs.

  6. In a small bowl, whisk together the fish sauce, tamarind paste, and sugar until well combined. Pour the sauce over the noodle mixture and stir to coat evenly.

  7. Add the bean sprouts and green onions to the pan and toss everything together.

  8. Remove the pad Thai from the heat and garnish with crushed peanuts. Serve with lime wedges on the side.
