How To Make Parsnip Soup with Parsley Cream

Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 parsnips, peeled and chopped
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper, to taste
- 1/4 cup chopped fresh parsley

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.

Add the parsnips to the pot and cook for another 5 minutes, stirring occasionally.

Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for about 20 minutes, or until the parsnips are tender.

Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend in batches.

Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
