Ingredients
- 1 large zucchini, sliced
- 1 large bell pepper, sliced
- 1 small yellow onion, sliced
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated parmesan cheese
Instructions

Preheat the oven to 375°F (190°C).

In a large baking dish, combine the zucchini, bell pepper, onion, cherry tomatoes, and garlic.

Drizzle the olive oil over the vegetables and sprinkle with dried basil, dried oregano, salt, and black pepper. Toss to coat evenly.

Bake in the preheated oven for 30-35 minutes, until the vegetables are tender and slightly browned.

Remove from the oven and sprinkle with parmesan cheese.

Return to the oven for an additional 5 minutes, until the cheese is melted and golden.
