  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, and garlic. Cook until vegetables are softened, about 5 minutes.

  2. Add cumin, paprika, turmeric, salt, and pepper. Stir to coat the vegetables with spices.

  3. Add black-eyed peas and vegetable broth. Bring to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes or until the black-eyed peas are tender.

  4. Use an immersion blender or transfer a portion of the soup to a blender and blend until desired consistency is reached. Return blended soup to the pot.
