Ingredients

  • 8 oz whole wheat pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped bell peppers (any color)
  • 1 cup sliced zucchini
  • 1 cup chopped broccoli
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant.

  3. Add the cherry tomatoes, bell peppers, zucchini, and broccoli to the skillet. Cook for 5-7 minutes until the vegetables are tender-crisp.

  4. Stir in the dried basil, dried oregano, red pepper flakes (if using), salt, and pepper. Cook for an additional 2 minutes to allow the flavors to combine.

  5. Add the cooked pasta to the skillet and toss well to coat the pasta with the vegetable mixture.

  6. Serve the vitality veggie pasta with a sprinkle of grated Parmesan cheese on top.
