  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until they become fragrant and translucent.

  2. Season the chicken breasts with chili powder, cumin, paprika, salt, and black pepper. Add the seasoned chicken to the skillet and cook until browned on both sides, about 4-5 minutes per side.

  3. Pour the chicken broth into the skillet and bring to a simmer. Cover the skillet and cook for about 20 minutes, or until the chicken is cooked through and tender.

  4. Using two forks, shred the cooked chicken directly in the skillet. Stir the shredded chicken to coat it in the flavorful broth.

  5. Continue to simmer the shredded chicken in the skillet for an additional 5-10 minutes, or until the broth has reduced and the chicken is fully flavored.

  6. Serve the shredded chicken taco filling in warmed tortillas with your favorite toppings such as shredded lettuce, diced tomatoes, shredded cheese, and salsa.
