Ingredients

  • 2 cups of fresh corn kernels
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 jalapeno pepper, seeded and diced
  • 1/4 cup of red onion, diced
  • 1/4 cup of fresh cilantro, chopped
  • 2 tablespoons of lime juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the fresh corn kernels, diced red and yellow bell peppers, diced jalapeno pepper, diced red onion, and chopped cilantro.

  2. Add the lime juice and toss to combine.

  3. Season with salt and pepper to taste, and mix well.

  4. Let the salsa sit for at least 10 minutes to allow the flavors to meld together.

  5. Serve the crunchy corn & pepper salsa with tortilla chips or as a topping for tacos or grilled meats.
