Ingredients

  • 1 lb chicken breast, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 bell pepper, thinly sliced
  • 1 cup snap peas
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together soy sauce, honey, and sesame oil. Set aside.

  2. Heat a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

  3. In the same skillet, add garlic and ginger. Cook for 1-2 minutes until fragrant.

  4. Add bell pepper, snap peas, and corn. Cook for 3-4 minutes until vegetables are tender-crisp.

  5. Return chicken to the skillet and pour the soy sauce mixture over the chicken and vegetables. Stir-fry for another 2-3 minutes until everything is well coated and heated through.

  6. Remove from heat and stir in cherry tomatoes, green onions, and cilantro. Season with salt and pepper to taste.

  7. Serve hot and enjoy!
