How To Make Summer Braised Chicken with Tomatoes

Ingredients
- 4 chicken thighs
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cups cherry tomatoes
- 1 cup chicken broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Season the chicken thighs with salt and pepper.

Heat olive oil in a large skillet over medium heat. Add the chicken thighs and cook until browned on both sides. Remove from the skillet and set aside.

In the same skillet, add diced onions and minced garlic. Cook until onions are softened.

Add cherry tomatoes, oregano, and thyme to the skillet. Cook for 5 minutes until the tomatoes start to soften.

Return the chicken thighs to the skillet and pour in the chicken broth. Bring to a simmer.

Cover the skillet with a lid and reduce the heat to low. Let it simmer for 1 hour, until the chicken is tender and cooked through.
