Ingredients

  • 4 boneless pork chops
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup dried apricots, halved
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. In a small bowl, combine paprika, cumin, cinnamon, cayenne pepper, salt, and black pepper. Rub the spice mixture evenly onto both sides of the pork chops.

  2. Heat olive oil in a skillet over medium-high heat. Add the pork chops and cook for 4-5 minutes on each side, or until browned and cooked through. Remove from the skillet and set aside.

  3. In the same skillet, add apricots, honey, orange juice, and lemon juice. Stir to combine and bring to a simmer. Cook for 5 minutes, or until the apricots are tender and the sauce has thickened slightly.

  4. Return the pork chops to the skillet and spoon the apricot mixture over them. Cook for an additional 2-3 minutes to heat through.

  5. Serve the pork chops with the spiced apricots sauce on top. Garnish with chopped fresh parsley.
