How To Make Gingery Shiitake Noodles

Ingredients

  • 8 oz dried noodles
  • 2 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 3 cloves of garlic, minced
  • 2-inch piece of ginger, grated
  • 8 oz shiitake mushrooms, sliced
  • 2 cups vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, sliced
  • Sesame seeds, for garnish

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.

  2. Heat the vegetable oil in a large skillet or wok over medium heat. Add the onion, garlic, and ginger and sauté for 2-3 minutes until fragrant.

  3. Add the shiitake mushrooms to the skillet and cook for another 5 minutes until softened.

  4. Pour in the vegetable broth, soy sauce, and sesame oil. Bring to a simmer and let cook for 5 minutes.

  5. Add the cooked noodles to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes until heated through.

  6. Serve the gingery shiitake noodles garnished with sliced green onions and sesame seeds.
