How To Make Gingery Shiitake Noodles

Ingredients
- 8 oz dried noodles
- 2 tbsp vegetable oil
- 1 onion, thinly sliced
- 3 cloves of garlic, minced
- 2-inch piece of ginger, grated
- 8 oz shiitake mushrooms, sliced
- 2 cups vegetable broth
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 green onions, sliced
- Sesame seeds, for garnish
Instructions

Cook the noodles according to package instructions. Drain and set aside.

Heat the vegetable oil in a large skillet or wok over medium heat. Add the onion, garlic, and ginger and sauté for 2-3 minutes until fragrant.

Add the shiitake mushrooms to the skillet and cook for another 5 minutes until softened.

Pour in the vegetable broth, soy sauce, and sesame oil. Bring to a simmer and let cook for 5 minutes.

Add the cooked noodles to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes until heated through.

Serve the gingery shiitake noodles garnished with sliced green onions and sesame seeds.
