  • 1/4 cup Dijon mustard
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 pound mixed vegetables (such as broccoli, carrots, and bell peppers), chopped

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. In a small bowl, whisk together the Dijon mustard, honey, minced garlic, soy sauce, olive oil, salt, and pepper.

  3. Place the salmon fillets on the prepared baking sheet and brush with the mustard glaze, making sure to coat evenly.

  4. Bake the salmon for 12-15 minutes, or until cooked through and flaky.

  5. While the salmon is baking, prepare the garlicky vegetables. In a large skillet, heat the olive oil over medium heat.

  6. Add the minced garlic and cook for 1-2 minutes, until fragrant.
