How To Make Garlic Chicken, Vegetable and Rice Skillet Recipe

Ingredients
- 4 boneless, skinless chicken breasts
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 zucchini, sliced
- 1 cup of cooked rice
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- Fresh parsley for garnish
Instructions

Season the chicken breasts with salt, pepper, dried oregano, and dried thyme.

In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for about 1 minute until fragrant.

Place the seasoned chicken breasts in the skillet and cook for 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the sliced bell peppers and zucchini. Cook for 3-4 minutes until they start to soften.

Add the cooked rice to the skillet and stir to combine with the vegetables.

Slice the cooked chicken breasts and add them back to the skillet. Cook for another 2-3 minutes to heat everything through.

Garnish with fresh parsley before serving.
