How To Make World’s Best Potato Salad

Ingredients
- 4 large potatoes
- 2 hard-boiled eggs
- 1/2 cup mayonnaise
- 2 tbsp dijon mustard
- 1/4 cup chopped red onion
- 1/4 cup chopped dill pickles
- 1/4 cup diced celery
- 2 tbsp chopped fresh parsley
- Salt and pepper, to taste
Instructions

Wash and peel the potatoes. Cut them into bite-sized pieces and place them in a pot of salted water. Bring the water to a boil and cook the potatoes until tender, about 10-15 minutes. Drain and set aside to cool.

In a large bowl, mash the hard-boiled eggs with a fork. Add the mayonnaise, dijon mustard, red onion, dill pickles, celery, parsley, salt, and pepper. Mix well.

Add the cooled potatoes to the bowl and gently toss until they are coated with the dressing.

Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
