Ingredients

  • 4 chicken breasts, boneless and skinless
  • 2 ripe mangoes, peeled and diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ginger, grated
  • 1 tsp turmeric powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent.

  2. Add the minced garlic and grated ginger to the skillet and cook for another minute.

  3. Sprinkle the turmeric powder, ground cumin, and ground coriander over the onion mixture. Stir well to combine.

  4. Add the chicken breasts to the skillet and cook until browned on both sides.

  5. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes or until the chicken is cooked through.

  6. Meanwhile, rinse the basmati rice under cold water until the water runs clear. Drain well.

  7. In a separate saucepan, heat 1 tbsp of vegetable oil over medium heat. Add the drained rice and sauté for 2 minutes.

  8. Pour in 2 cups of chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.

  9. Remove the chicken breasts from the skillet, slice them into strips, and return them to the skillet. Add the diced mangoes and cook for another 5 minutes.

  10. Serve the mango chicken over the spiced pilau rice. Garnish with fresh chopped cilantro.
