How To Make Cauliflower Rice Stir-Fry

Ingredients
- 1 large head of cauliflower
- 2 tablespoons sesame oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 carrot, diced
- 1 cup frozen peas
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon ginger, grated
- 2 green onions, thinly sliced
- Salt and pepper to taste
Instructions

Remove the leaves and stem from the cauliflower head and cut into florets. Place the florets in a food processor and pulse until it resembles rice grains.

Heat the sesame oil in a large skillet or wok over medium heat. Add the diced onion and cook until translucent.

Add the minced garlic, diced bell pepper, and carrot to the skillet. Stir-fry for 4-5 minutes until the vegetables are slightly tender.

Add the cauliflower rice and frozen peas to the skillet. Stir-fry for another 4-5 minutes until the cauliflower rice is cooked through.

In a small bowl, whisk together the soy sauce, rice vinegar, and grated ginger. Pour the sauce over the stir-fry and toss to coat.

Cook for an additional 1-2 minutes, until the flavors are well combined.

Remove the skillet from heat and stir in the sliced green onions. Season with salt and pepper to taste.
