Ingredients

  • 1 large head of cauliflower
  • 2 tablespoons sesame oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 1 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger, grated
  • 2 green onions, thinly sliced
  • Salt and pepper to taste

Instructions

  1. Remove the leaves and stem from the cauliflower head and cut into florets. Place the florets in a food processor and pulse until it resembles rice grains.

  2. Heat the sesame oil in a large skillet or wok over medium heat. Add the diced onion and cook until translucent.

  3. Add the minced garlic, diced bell pepper, and carrot to the skillet. Stir-fry for 4-5 minutes until the vegetables are slightly tender.

  4. Add the cauliflower rice and frozen peas to the skillet. Stir-fry for another 4-5 minutes until the cauliflower rice is cooked through.

  5. In a small bowl, whisk together the soy sauce, rice vinegar, and grated ginger. Pour the sauce over the stir-fry and toss to coat.

  6. Cook for an additional 1-2 minutes, until the flavors are well combined.

  7. Remove the skillet from heat and stir in the sliced green onions. Season with salt and pepper to taste.

  8. Serve the cauliflower rice stir-fry hot as a main course or as a side dish with your favorite protein.
