How To Make Vegetarian Low Carb Cauliflower Fried Rice Recipe
A low carb version of fried rice featuring cauliflower as the star ingredient. Perfect for vegetarians and those on a low carb diet.
Serves:
Ingredients
- 1 head of cauliflower, grated
- 2 tbsp of vegetable oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 2 cloves of garlic, minced
- 1/4 cup of soy sauce
- 2 eggs, beaten
- 1 tsp of sesame oil
- green onion, sliced, for garnish
Instructions

Heat a large wok or skillet over medium-high heat.

Heat vegetable oil and sauté onions, red bell pepper, and garlic for 3-5 minutes until vegetables are softened.

Add grated cauliflower to the pan and continue to stir fry for another 3-5 minutes until the cauliflower is slightly tender.

Add soy sauce and stir to coat the vegetables.

Push the vegetable mixture to one side of the pan and scramble the eggs in the empty space until fully cooked.

Mix the scrambled eggs into the vegetable mixture.

Drizzle sesame oil over the top and continue to stir fry for an additional 1-2 minutes.

Garnish with sliced green onions and serve hot.
