Ingredients
- 1.5 lbs stew meat, cut into small chunks
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup beef broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional toppings: shredded cheese, sour cream, sliced green onions
Instructions

In a large skillet, heat some oil over medium-high heat. Brown the stew meat in batches until browned on all sides. Transfer the meat to the slow cooker.

In the same skillet, sauté the onion, garlic, and bell pepper until softened. Add them to the slow cooker with the browned meat.

Add the diced tomatoes, kidney beans, black beans, beef broth, chili powder, cumin, paprika, oregano, salt, and black pepper to the slow cooker. Stir everything together to combine.

Cover the slow cooker and cook on low heat for 4-6 hours or on high heat for 2-3 hours, or until the meat is tender and the flavors are well combined.
