  • 1 lb beef stew meat, cubed

  • 2 potatoes, diced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add the beef stew meat and cook until browned on all sides.

  2. Add the onion, carrots, potatoes, celery, and garlic to the pot. Cook for 5 minutes, stirring occasionally.

  3. Pour in the beef broth and diced tomatoes. Stir in the dried thyme, dried rosemary, salt, and pepper.

  4. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, stirring occasionally.
