Ingredients

  • 1 kg chicken, cut into serving pieces
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 tablespoons fish sauce
  • 2 cups coconut milk
  • 1 cup water
  • 3 pieces Thai chili peppers (optional)
  • 1 cup spinach or kangkong leaves
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Add the onions, garlic, and ginger. Sauté until aromatic and onions are translucent.

  2. Add the chicken pieces and cook until browned on all sides.

  3. Pour in the fish sauce and stir to coat the chicken evenly.

  4. Add the coconut milk and water. Stir well and bring to a gentle boil.

  5. Reduce the heat, cover the pan, and simmer for 30-40 minutes or until the chicken is tender and cooked through.

  6. Add the Thai chili peppers (if using) and spinach. Cook for an additional 5 minutes.

  7. Season with salt and pepper to taste.

  8. Serve hot with steamed rice.
