How To Make Lemongrass Beef Stew with Noodles

Ingredients
- 1.5 lbs beef stew meat, cut into chunks
- 2 stalks lemongrass, bruised and chopped
- 4 cloves garlic, minced
- 1 onion, sliced
- 1 red bell pepper, thinly sliced
- 4 cups beef broth
- 2 cups water
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1 teaspoon ground pepper
- 1 tablespoon vegetable oil
- 8 oz rice noodles
- Fresh cilantro and lime wedges for garnish
Instructions

In a large pot, heat the vegetable oil over medium-high heat. Add the beef stew meat and brown on all sides.

Add the lemongrass, garlic, onion, and red bell pepper to the pot. Saute for a few minutes until fragrant.

Pour in the beef broth, water, soy sauce, fish sauce, brown sugar, and ground pepper. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until the beef is tender.

While the stew is simmering, cook the rice noodles according to package instructions. Drain and set aside.

Serve the lemongrass beef stew over a bed of rice noodles. Garnish with fresh cilantro and lime wedges.
