Ingredients

  • 1.5 lbs beef stew meat, cut into chunks
  • 2 stalks lemongrass, bruised and chopped
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 1 red bell pepper, thinly sliced
  • 4 cups beef broth
  • 2 cups water
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground pepper
  • 1 tablespoon vegetable oil
  • 8 oz rice noodles
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the beef stew meat and brown on all sides.

  2. Add the lemongrass, garlic, onion, and red bell pepper to the pot. Saute for a few minutes until fragrant.

  3. Pour in the beef broth, water, soy sauce, fish sauce, brown sugar, and ground pepper. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until the beef is tender.

  4. While the stew is simmering, cook the rice noodles according to package instructions. Drain and set aside.

  5. Serve the lemongrass beef stew over a bed of rice noodles. Garnish with fresh cilantro and lime wedges.
