How To Make Chicken Sausage and White Bean Stew

A hearty stew with chicken sausage and white beans in a flavorful broth.

Ingredients

  • 4 chicken sausages, sliced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 cans (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 cups baby spinach

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat.

  2. Add chicken sausage slices and cook until browned, about 5 minutes.

  3. Add onion and garlic, and sauté for 2-3 minutes until onion is translucent.

  4. Stir in white beans, diced tomatoes, chicken broth, thyme, paprika, salt, and pepper.

  5. Bring to a boil, then reduce heat and simmer for 10-15 minutes.

  6. Add baby spinach and cook until wilted, about 2-3 minutes.

  7. Serve hot and enjoy!
