Ingredients

  • 4 spicy sausages
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 can (400g) of diced tomatoes
  • 2 cans (400g each) of mixed beans, drained and rinsed
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large, deep skillet, cook the sausages over medium heat until browned. Remove from skillet and set aside.

  2. In the same skillet, sauté the onion, garlic, and red bell pepper until softened.

  3. Slice the cooked sausages and return them to the skillet.

  4. Add the diced tomatoes, mixed beans, smoked paprika, chili powder, cumin, salt, and black pepper. Stir well to combine.

  5. Cover the skillet and let the mixture simmer for 30 minutes, stirring occasionally.

  6. Taste and adjust seasoning if needed.

  7. Serve the spicy sausage and bean one-pot with a sprinkle of fresh parsley on top.
