Ingredients

  • 1 cup wild rice
  • 1 can mixed beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the wild rice according to package instructions and let it cool.

  2. In a large bowl, combine the cooked wild rice, mixed beans, red bell pepper, red onion, and parsley.

  3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.

  4. Pour the dressing over the salad and toss to combine.

  5. Serve chilled and enjoy!
