How To Make Mixed Bean & Wild Rice Salad

Ingredients
- 1 cup wild rice
- 1 can mixed beans, drained and rinsed
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions

Cook the wild rice according to package instructions and let it cool.

In a large bowl, combine the cooked wild rice, mixed beans, red bell pepper, red onion, and parsley.

In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.

Pour the dressing over the salad and toss to combine.
