Ingredients

  • 1 tbsp olive oil
  • 1/2 lb Italian sausage, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup chicken broth
  • 1 tsp dried basil
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook until browned, about 5-7 minutes.

  2. Add the onion and garlic to the skillet and sauté until softened, about 3-4 minutes.

  3. Pour in the diced tomatoes, cannellini beans, chicken broth, and dried basil. Season with salt and pepper, as desired.

  4. Bring the ragout to a boil, then reduce the heat to low and let simmer for 20-25 minutes until the sauce has thickened and the flavors have melded together.

  5. Serve hot with bread or over pasta.
