How To Make Moroccan-style chicken stew

Ingredients
- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (optional for spice)
- 1 cup chicken broth
- 1 can (14 ounces) diced tomatoes
- 2 carrots, peeled and sliced
- 1 cup diced potatoes
- 1 cup chopped zucchini
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

Season the chicken thighs with salt and pepper.

In a large pot, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken from the pot and set aside.

In the same pot, add the diced onion and minced garlic. Cook until softened and fragrant.

Add the ground cumin, ground coriander, ground turmeric, ground cinnamon, and cayenne pepper. Stir to coat the onions and garlic with the spices.

Pour in the chicken broth and diced tomatoes. Bring to a simmer.

Add the carrots, potatoes, and zucchini to the pot. Return the chicken thighs to the pot. Cover and simmer for 1 hour or until the chicken is cooked through and the vegetables are tender.
