Serves:

Ingredients

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 large carrots, chopped
  • 1 large sweet potato, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 cup couscous
  • Chopped fresh parsley for garnish

Instructions

  1. In a slow cooker, combine all vegetables, chickpeas, diced tomatoes, and vegetable broth.

  2. Stir in all spices and seasonings.

  3. Cover and cook on high for 4-6 hours, or until vegetables are tender.

  4. Cook couscous according to package instructions.

  5. Serve stew over couscous, garnished with fresh parsley.
