Ingredients

  • 1 lb ground lamb
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can chickpeas, drained and rinsed
  • 1 cup diced tomatoes
  • 2 cups chicken or vegetable broth
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the ground lamb and cook until browned, stirring occasionally.

  2. Add the chopped onion and garlic to the lamb and cook until the onions are tender, about 5 minutes.

  3. Add the chickpeas, diced tomatoes, broth, cumin, smoked paprika, salt, and pepper to the pot. Bring to a boil, then reduce heat to low and let the stew simmer for about an hour.

  4. Taste the stew and adjust seasoning as needed. Garnish with cilantro before serving.
