Ingredients

  • 4 lamb steaks
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 4 cloves of garlic, minced
  • 1 can (400g) diced tomatoes
  • 1/2 cup pitted black olives
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Season the lamb steaks with salt and pepper on both sides.

  2. Heat olive oil in a large skillet over medium-high heat. Cook the lamb steaks for about 4-5 minutes per side until browned. Remove from the skillet and set aside.

  3. In the same skillet, add the sliced onion and minced garlic. Cook until onion is softened and lightly browned.

  4. Add the diced tomatoes, olives, rosemary, and parsley. Stir well to combine. Cook for 5 minutes, allowing the flavors to meld together.

  5. Return the lamb steaks to the skillet, nestling them into the tomato and olive mixture. Cover the skillet and cook for an additional 10-15 minutes, or until the lamb is cooked to your desired level of doneness.

  6. Serve the lamb steaks with the tomato and olive sauce spooned over the top.
