How To Make Marinated lamb steaks with paprika roast tomatoes & butterbean smash

Ingredients
- 4 lamb steaks
- 2 tablespoons olive oil
- 2 cloves of garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 8 plum tomatoes, halved
- 2 teaspoons paprika
- 2 cans of butterbeans, rinsed and drained
- 2 tablespoons butter
- 1/4 cup chicken or vegetable broth
- Fresh parsley, for garnish

In a bowl, combine the olive oil, minced garlic, dried rosemary, dried thyme, salt, and pepper.

Rub the marinade all over the lamb steaks. Let them marinate for at least 30 minutes, or overnight in the refrigerator.

Preheat your grill or grill pan over medium-high heat. Grill the lamb steaks for about 4-5 minutes per side, or until desired doneness. Remove from heat and let them rest for a few minutes.

Meanwhile, preheat your oven to 400°F (200°C). Place the halved plum tomatoes on a baking sheet, cut side up. Sprinkle with paprika, salt, and pepper. Roast in the oven for 15-20 minutes, or until soft and slightly charred.

In a medium saucepan, melt the butter over medium heat. Add the butterbeans and chicken or vegetable broth. Cook for 5-7 minutes, stirring occasionally, until the beans are heated through and slightly mashed. Season with salt and pepper to taste.

Serve the grilled lamb steaks with the paprika roast tomatoes and butterbean smash. Garnish with fresh parsley.
