How To Make Tomato and Basil Soup

- 2 pounds of tomatoes, quartered
- 1 onion, chopped
- 4 cloves of garlic, minced
- 1/4 cup of fresh basil leaves, chopped
- 2 tablespoons of olive oil
- 4 cups of vegetable broth
- Salt and pepper to taste

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.

Add the tomatoes and cook for about 10 minutes, until they start to break down.

Stir in the basil and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
