Ingredients

  • 1 kg fresh tomatoes, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • Fresh basil leaves, for garnish
  • For the tear & share cheesy bread:
  • 1 loaf of bread, preferably ciabatta or baguette
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp melted butter
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.

  2. Add the diced tomatoes, dried basil, dried oregano, salt, and black pepper to the pot. Stir well to combine.

  3. Pour in the vegetable broth and bring the mixture to a simmer. Cook for 15-20 minutes, until the tomatoes are soft and cooked down.

  4. Use an immersion blender or transfer the soup to a blender, and puree until smooth. Return the soup to the pot and stir in the heavy cream. Heat through, but do not let it boil.

  5. Meanwhile, preheat the oven to 375°F (190°C). Cut the loaf of bread into thick slices, without slicing all the way through. Place the bread on a baking sheet lined with parchment paper.

  6. In a small bowl, mix together the melted butter, shredded mozzarella cheese, grated Parmesan cheese, and chopped fresh parsley. Spread this mixture into the slices of the bread, making sure to get it in between each slice.

  7. Bake the tear & share cheesy bread in the preheated oven for about 15 minutes, until the cheese is melted and bubbly.

  8. Serve the tomato soup hot, garnished with fresh basil leaves. Serve the tear & share cheesy bread alongside the soup for dipping and tearing apart.
