  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 cans of diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup pasta of your choice
  • Fresh basil leaves, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened.

  2. Add the diced tomatoes, vegetable broth, dried basil, and dried oregano to the pot. Bring to a boil, then reduce heat to low and simmer for 15 minutes.

  3. Using an immersion blender or regular blender, puree the soup until smooth. Season with salt and pepper to taste.

  4. Meanwhile, cook the pasta according to package instructions. Drain and set aside.

  5. Once the soup is pureed, stir in the cooked pasta.

  6. Serve the tomato soup with pasta hot, garnished with fresh basil leaves.
