Ingredients
- 1 can (14 oz) coconut milk
- 2 cups vegetable broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon curry powder
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions

In a large pot, heat some oil over medium heat. Add the diced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.

Add the curry powder to the pot and stir well to coat the onion and garlic.

Pour in the coconut milk and vegetable broth. Stir until well combined.

Add the black beans, kidney beans, and chickpeas to the pot. Stir to mix everything together.
